December Pinterest Challenge-- Stuffed Acorn Squash

My husband and I have been eating a lot of squash this fall.  It's always been one of our favorite foods but when it's zero points and a wonderful filler-- we are eating even more of it than ever.

I was looking for a few new recipes for both acorn and butternut squash when I saw three different recipes for stuffed acorn squash in one week!  I figured that was a sign we should try this out and boy did we love it!



I finally settled on this Pin and actually followed the recipe almost exactly!

The only changes I made were to:
  • sprinkle the squash with a bit of cinnamon before roasting
  • only spraying the pan with cooking spray and not the squash so I omitted the olive oil
  • using button mushrooms in place of the baby bellas.

Since all of the ingredients were so low in points we splurged with full fat Coby- Jack cheese shreds (only 1/4 cup each) and the entire meal was 4 points.  (You can make it using 1/4 cup fat free shredded cheese for only 1 Point-- 1!)

I could not believe all the food I was getting to eat.  I just love generous portions and filling meals that are low in points.




Packed with apple, cinnamon, squash and turkey each mouthful tasted like fall!  Plus we had very generous portions as you can see here.  I even had enough  of the "stuffing" left that I put it in Tupperware with a bit of leftover rice for another low point and filling lunch the next day.
