Weigh- In Wednesday: 5 Month Check In

I find it so hard to believe I've been following Weight Watchers for 5 months now.  I do have to say it is becoming so much easier to follow too.  I rarely feel the need to cheat and when I do I just let myself and get right back to healthy eating.  


As of writing this post I am down another 3 lbs. this month.  I honestly expected that number to be a bit higher since I have even picked back up on our hiking and exercise but I know the closer I get to my goal the harder the weight is to get off.  I am only 17 lbs. away from my goal and I feel great!
I have been eating lots and lots of fresh fruits and veggies.  I also realized that English Muffins are only 4 points and make a great egg sandwich now with hard boiled eggs, English muffins, and fat free cheese shreds.

Somehow it tastes even better out on the deck, in the sunshine, reading and relaxing. 


I still eat mostly salads for lunch and keep on trying new combinations.  One of my favorites this month was a few bacon slices crum…

August Pinterest Challenge-- Weight Watchers American Chop Suey

We tried one recipe my first week on Weight Watchers that my boys loved so much they ask to make it almost every week!  I saw this pin on Pinterest and thought it looked too good not to try!  The original recipe calls for 12- 5 point servings but when I saw how small the servings would be I knew that would not hold my growing boys over until the next meal.

We made a few tweaks and adjustments over time so that the recipe would easily feed the whole family and leave us all feeling well fed when paired with a lovely green salad.  We managed to get about 8 servings at 8 points each



Ingredients: (8 points per cup serving)
1 lb 99% lean turkey breast
1 tsp minced garlic
1 tablespoon dried onion flakes
1 tsp Italian seasonings
16 ounce box of pasta
1 24 ounce can Hunts no sugar added pasta sauce
1 15 ounce can no salt added diced tomatoes with the juice
3/4 cup part skim shredded pizza cheese
3/4 cup shredded fat free mozzarella cheese 
15 Turkey pepperoni slices

100 Days of science #89, 90, & 91- DNA Experiments

We studied quite a bit about DNA this year and I could not believe it when I realized that we had totally forgotten to do these fun DNA experiments I had picked out!  I decided there was not time like the present and gathered all the materials we needed. 


Before starting any of the experiments I did ask the boys to tell me everything they could remember about DNA and I was pleasantly surprised at all that they had retained from our readings.  We quickly moved onto the experiments. 

First we did a strawberry DNA extraction.   
Using a strawberry, some rubbing alcohol, water, and dish soap we were able to extract (a few!) DNA strands from the strawberry.  


We put our rubbing alcohol in the freezer for about 20 minutes; it needs to be cold to work properly.

Meanwhile in a small glass we combined 6 Tablespoons of tap water with 2 tsp. of dish soap and just a pinch of salt.



With our solution all ready to go we set it aside and began working on smooshing up our strawberry.  We put it in a Z…

Hiking Mount Wachusett

Last weekend my husband and I felt like doing some hiking so we took the younger two boys up Mount Wachusett; I later found out that our very first trip up Wachusett was on that exact same day 6 years earlier!



We had beautiful weather and decided to try out a new and shorter trail that went right up to the summit without much meandering.  It was quite the cardio workout and we did stop a couple quick times (though the mosquitoes were out so they were fairly short stops!).






Once at the top we enjoyed the views and a bit of snack too.







We took a slightly longer trail down but we did stop for a few minutes to enjoy the meadow view.


By the time we reached the bottom we were ready for some lunch.  We found a great little restaurant nearby that we had never been to-- The Mountain Barn.  We figured it must be pretty great when we pulled up to a private helicopter landing!

We had a pretty view from our table and the food was delicious!
