How to Make Pizza on a Gas Grill

I have been wanting to try making pizza on the grill forever but I was always so intimidated by the idea.  But I decided this was going to be the summer I finally made it happen... and boy it was so tasty that I found myself wishing I had started making pizza on the grill a long time ago.

It has all the flavor of a brick oven pizza without the brick oven!

Since no one in our family likes the same kind of pizza I break our batch of pizza dough into 4 individual serving.  I flattened them out and put them on two cookie sheets lines with parchment paper.  

I heated the grill to 350, cleaned it off really well with the brush and then used a paper towel with a bit of vegetable oil on it to oil up the grill rack just to make sure my pizza wouldn't stick to it. 

I laid each pizza right on the grill rack and shut the grill.

In just a few minutes (2- 3 at most) you'll notice the dough begins to puff up and the grill side gets a nice golden brown.  Remove the dough from the grill and add toppings TO THE SIDE YOU HAD GRILLED.

I used those same parchment lined pans and brought our pizza inside to assemble since it was so darn hot out!  The raw pizza dough should be facing up and you want to add sauce, cheese, and topping to the side that is lightly crunchy.

We put the pizzas back on the grill and let them cook until the cheese was nice and melted and the bottom crust was finished cooking.

We did end up throwing the pizzas under the broiler just to brown up the cheese (we can't let our grill get hotter than 350 or it tends to catch fire.. yeah, we need a new grill).

See how nice and brown/ crunchy the bottom gets?  It gives it so much flavor!
