New England Style Broccoli Salad

My mother in law made a broccoli salad for the 4th of July cookout this year and I had forgotten about how much I used to enjoy them.

I had a bunch of broccoli and cauliflower I needed to use up last week and after looking up a few recipes and making a few of my own modifications I came up with a wonderful new take on an old traditional favorite.



My New England Style Broccoli Salad has maple syrup and craisins!  YUM!  It adds a whole new texture and taste that I just love.  I hope you enjoy it as much as we did.


Ingredients:
2 cups cauliflower florets
2 cups broccoli florets
1/4 cup craisins
1/4 cup pecan halves
1/3 cup diced colby jack cheese
4 slices bacon, cooked, cooled and crumbled
1/2 cup mayonnaise
1/2 cup plain nonfat yogurt
1/4 cup maple syrup
1 tsp. yellow mustard
Salt and pepper to taste

1.  In a medium bowl mix together broccoli florets, cauliflower florets, craisins, pecan halves, cheese and bacon.


2.  In a separate bowl whisk together mayonnaise, non fat yogurt, syrup and mustard then pour gradually over the broccoli mixture.  I don't usually use the whole bowl of dressing since I prefer a lighter coating.


I did save the leftover and it makes a wonderful dressing for any salad.  
It is ready to eat right away but I often make it in the morning and let it sit for a bit in the fridge so all the flavors can meld and I think the broccoli and cauliflower soften up a bit that way too.
