Leftover Turkey Pie

OK so I know we don't have the most creative name for this dish, but that's what it was called when it was passed on to us.

Many, many years ago we headed to my girlfriend's house after Thanksgiving and she served us leftover pie.  I just LOVED it and immediately asked for the recipe.  She told me there was no recipe.  That the pie changes slightly every year because they just use whatever is leftover from Thanksgiving dinner to make the pie.

The next year with leftovers in hand and her assurances I couldn't mess it up I began making our first leftover pie.  My husband and I enjoy it so much I always make extra food and now look more forward to the pie than actual Thanksgiving dinner!!

I never have to worry about one dish getting cold or the stuffing or turkey getting dry because it's all piled together in one great dish with lots of gravy to keep everything moist.

I don't like gravy but in this dish it all cook in and cooks up so nicely I just can not resist.

This year we had enough leftovers to make 2 pies!!

Ready for the recipe?

It really is super simple!

I take a nice deep casserole dish and start with a layer of turkey

We then add some gravy.

A layer of stuffing

Some more gravy

Some butternut squash

Some more gravy

(some years we have leftover peas or broccoli) and I would add them before the mashed potatoes.

I always end the pie with a nice thick layer of mashed potatoes.

Then I bake it in the oven at 350 degrees for 30-40 minutes until the mashed potatoes are lightly browned and the gravy is bubbling.

Just look at all those layers of ooey goodness!
