Perfect Waffle Recipe

Today's blog is brought to you by my oldest son.  He's 11, has been homeschooling for three years now and just loves it.

One of the things Ian has really taken to in the last year or so is baking and cooking.

In particular Ian loves to make waffles.

He always makes a double batch so we have plenty of leftovers for freezing.  Whenever we run out of waffles in the freezer he makes more.  Today he wanted to share his waffle recipe with you.  He'll dictate and I'll type... since he's busy making waffles again!

Ian's Double Batch of Waffles:
(Taken from Better Homes and Gardens New Cookbook)

  • 3 1/2 cups flour
  • 4 Tablespoons sugar
  • 2 Tablespoons Baking Powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 3 1/2 cups milk
  • 1 cup vegetable oil
  • 2 teaspoon vanilla
  • Add in's: chocolate chips, blueberries, or sprinkles

Step 1: In a large bowl mix eggs, milk, vegetable oil, and vanilla together with a whisk.  In a separate large bowl mix flour, sugar, baking powder, and salt wish a whisk.  Then add the egg & milk mixture into the flour and sugar mixture.  Whisk well until combined.

Step 2:  Heat the waffle iron and spray with non-stick cooking spray.  Once iron is heated add waffle mix using a 1/2 cup measure (or the amount your waffle maker calls for).   Sprinkle with toppings of chocolate chips, blueberries or sprinkles, if you want, and then close the lid.  Continue cooking until the waffle maker light turns green or says it's ready.

Then eat them while they're hot and crunchy.
